Ingredients
Yellow Cornstarch (80%), Water, Emulsifier: E452.
Special Palabok Cornstarch Sticks (Noodles)
Easy way to prepare palabok:
1. Soak 1/2 kilo Super Q Special Palabok in tap water for 10 minutes.
2. Boil palabok in water for 8 to 10 minutes or until tender, and turn off heat.
3. Stir to loosen (don't drain) and leave the palabok for another 15 to 30 minutes.
4. Drain and transfer palabok on plate, pour sauce, garnish with toppings and serve with patis and calamansi.
Easy way to cook palabok sauce:
Ingredients:
1 tbsp cooking oil
1 red onion (chopped)
2 shrimp broth cubes
5 cups water
2 tbsp patis (fish sauce)
1.2 cup achuete water (3 tbsp achuete soak and squeeze in 1/2 cup of water and strain).
1/2 cup flour and 1/2 cup cornstarch (dissolve in small amount of water).
Procedure:
1. Saute red onion and shrimp broth cubes in cooking oil.
2. Add 5 cups of water.
3. Add 2 tbsp of patis.
4. Add achuete water slowly to desired colour.
5. Upon boiling, lower heat and pour slowly the dissolved mixture of cornstarch and flour while stirring for 10 minutes or until sauce thickens.
Easy way to make toppings:
1/4 cup minced garlic (saute in oil until light brown)
1/4 kilo shrimp (boil in lightly salted water and removed shell when cooked)
3 cups flakes and toasted smoked fish (tinapa)
1/4 kilo chichron (crushed)
3 pc. hard boiled eggs (sliced)
1/2 cup pechay Baguio (boiled chopped).
Store in cool dry place.
